TUNA CUTTING

Few experiences bring you this close to the art of sushi. Watch as Chef David breaks down an entire tuna from start to finish, sharing the cuts, techniques, and knowledge behind one of Japanese cuisine’s most celebrated traditions. As the evening unfolds, the tuna moves from the cutting board to your plate, freshly prepared and served along the way.

At the center of it all is a rare level of expertise. Chef David is the first non-Japanese chef to earn Japan’s prestigious Grade 1 Tuna Dismantling Master certification, awarded by the Japan Association of Dismantling Tuna (JADT).
